For some of us comfort comes in the form of a soft blanket, a warm hug or even a cup of tea.
What comforts me most when I am sick is a casserole. To some that may sound strange but to me the goodness that comes from a 9×13 pan brings a smile to my face and happiness to my tummy.
While I have been down with “the girls” (YES…I had a breast lift!…I am an open book so feel free to discuss amongst yourselves) I was blessed to have dinner delivered to me and my family twice from friends!
The first night we received a Mediterranean pasta and the second night we had homemade chicken enchiladas! Both of these dishes were superb and inspired this Mama to heal enough to head back into the kitchen and cook up some of my favorite casseroles.
I decided to make Paula Deen’s Chicken Florentine casserole. The only thing that would have made this recipe better is if Paula had been here in my kitchen to make it for me. Unfortunately, Paula has bigger fish to fry so I went ahead and made it myself but it was so darn easy I almost didn’t mind. The best part of this recipe is that it can be made far in advance and then placed in the freezer until you need it!
