Yes, I just said that…PLASTIC!
No more of your mama’s summertime plates with the tacky big fruit designs! Plasticware has taken a turn to the elegant and even down right classy thanks to Tulip’s of Norman (located on Campus Corner)
Recently I visited Tulip’s and decided to check out their wares for myself. I was immediately drawn to the gorgeous dinnerware and imagine my surprise when I picked up the green plate thinking it would be perfect to highlight my Guiltless Key Lime Pie only to find out that it was not pottery but plastic!
No sooner than I figured that out did I start picking up and messing with everything on the table. The tumblers, goblet, and platters were all plastic! You simply have to see it to believe it. However, by far the best part of this dinnerware is that they DO NOT CLOUD in the dishwasher. How many of us have bought really cute plastic glasses only to have them fog over after a couple of washes?
Not these little plastic lovers!
Just when I thought I had seen it all I was delighted to see that they also offer this line of dishware in Red! Which, as a HUGE fan of the Sooners is absolutely perfect for my upcoming tailgate this weekend!

Today I will be doing lots of cooking using super fresh ingredients! Starting with one of my family’s favorites: Baja Fish Tacos.
Every year my husband and I are able to spend time in California and there truly is nothing better tasting to me than their lighter, fresher take on tacos. Best part is that they use a white fish and grill it. This means NO heavy sauces or cheeses, just simple and delicious grilled fish, corn tortillas, cabbage and a sprinkling of cotija cheese. These tacos really are a taste of perfection!
No meal can be complete without a light and easy Key Lime Pie. I created this recipe for my dear Uncle Phil who is trying to eat healthier but didn’t want to have to give up his favorite dessert of all time. The lighter recipe was such a hit that many times I make this in lieu of the full fat version!
Lucky for me I get to serve these fresh delicious dishes on my new gorgeous tableware!
Baja Fish Tacos
Ingredients
- 4 firm white fish filets (Mahi Mahi, Swordfish, Sea Bass, Tilapia)
- olive oil
- 16 corn tortillas
- 1 bag coleslaw mix
- 1 bunch cilantro
- 1 cup cojita cheese (crumbled)
- fresh salsa
- mango slices
- Mexican Crema
Instructions
- In a smoking hot grill pan (or outside grill) grill fish till cooked through. Remove from heat and place on a platter. Warm tortillas by wrapping them in a paper towel and microwave for 30 seconds. To prepare, simply top corn tortilla with 1/2 of a filet of fish, coleslaw mix, sprinkle with cheese and cilantro. Top with salsa and mango slices. Add a dollop of mexican crema and eat!

Guilt Free Key Lime Pie
Ingredients
- 3 egg yolks, (I use Eggsland Best)
- 2 limes, zest only
- 1 can fat free sweetened condensed milk
- 2/3 cup key lime juice
- 1 reduced fat graham cracker crust
- 1 container fat free Cool Whip
Instructions
- Preheat oven to 350 degrees.
- In a large bowl beat together the egg yolks and lime zest for 4 minutes. DO NOT SKIMP! Add in sweetened condensed milk and beat for an additional 3 minutes. Add in key lime juice and beat for 1 minute. Pour creamy mixture into pie crust and bake for 10 minutes. Remove from the oven and allow to cool. Place in the freezer and allow to freeze. Before serving top with Cool Whip and garnish with lime zest. Serve chilled!
