If you have been out to a fancy restaurant then you have seen that the “new” popular salad is Chopped Salad. A couple of years ago it was Bibb, in the 90’s it was Caesar well now Chopped Salads are the new diva on the menu! I love chopped salads because basically it is just yummy things like veggies, meats, cheeses, nuts and other crunchies all chopped up and dressed! So, when I travel I always try to select that particular restaurants take on this salad. So far very few duplicate each other. There are Cuban, Italian, Southern, Spanish, and Steakhouse varieties. This holiday season I was in Florida and got the opportunity to go to a certain famous Crab house that makes what I think is one of the best. I was intrigued with the lack of cheese and the addition of sugar coated peanuts. Yum! So here is my version…Hope you enjoy.
Remember….you can make your own chopped salad by playing with the things in your own fridge! Be adventurous and then share with me your favorite blend!
Miami Chopped Salad
1/2 cup chopped white onion
3 tbsp minced fresh flat leaf parsley
4 tbsp chopped pimento
1 1/2 tsp sugar
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp drained capers
1/3 cup wine or cider vinegar
3/4 cup olive oil
Whisk together all the ingredients till oil is emulsified. Store in a jar in the refrigerator for at least 4 hours before serving. Shake to serve.
Salad Ingredients:
Iceberg lettuce, shredded
canned black olives, sliced
1/2 cup feta cheese
2 boiled eggs (cut into slices)
1/2 cup honey roasted peanuts
1 tomato, chopped
1 cucumber, chopped
1 red onion, chopped
2 carrots, chopped into bits
Place lettuce and all of the toppings in a large bowl. Pour vinaigrette over the salad and toss. Serve immediately.
