We are on the boat and one of my most favorite things to eat is cheese and crackers. Simple, delicious and filling! My kids love this relaxed way of eating and it really allows me to clean out the fridge!
Many times this meal consists of: swiss cheese, cheddar, salami, olives, sliced nectarines, grapes, figs, flatbread crackers and Boursin cheese. Now you might be wondering what is Boursin? It is that little round foil wrapped creamy herbed cheese that you can buy in the “fancy” cheese section of your grocery. I just love this stuff….But the only problem is that it can be a bit pricey. So, I got to digging in my mom’s old recipe box and came across this little gem. Sounds a lot like Boursin. Best part is that when I made it….I was right! So check out my mock Boursin cheese spread!
My Momma’s “Boursin-esque” Spread
2 garlic cloves, minced or pressed
16 oz. (2 bricks) cream cheese, room temperature
1 cup (2 sticks) butter, room temperature
1 tsp. dried oregano
1/4 tsp. dried dill week
1/4 tsp. dried marjoram
1/4 tsp. dried basil
1/4 tsp. dried thyme
1/4 tsp. freshly ground black pepper
Blend cream cheese and butter together until well combine. Add pressed garlic and herbs. Mix until well combined. The cheese can be refrigerated for up to 1 week or frozen for up to three months.
