Ok…I was weak….9:30 rolled around and I had a perfect food day. But then I was overcome with the urge to eat CHOCOLATE. It was like I had Willy Wonka whispering in my ear…CHOCOLATE….CHOCOLATE. I could not get away from it. So, in the past I would have plopped down and eaten a huge mug of ice cream. (btw- I used a mug because I thought it was a smaller portion…but that only works when you do not hand pack it over the top) Ok, sorry, that was last year. Well, I decided to try and make a little cake in a mug instead. I had seen those recipes in the past using cake mixes but those are loaded with sugar. So, I was trying to be good but get this CHOCOLATE chant out of my head. So, here is what I came up with. Best part is that it has a low glycemic index because I used agave in lieu of sugar. Also, used coconut flour instead of all-purpose. (If you don’t have coconut flour…use Shawnee Mills All Purpose Flour)
