No Fuss Weekend Omelets
8 eggs
1/4 cup milk or half and half
various chopped vegetables
1/4 cup Schwab’s ham, chopped
1/3 cup shredded cheese
various chopped veggies (green onions, red bell peppers, mushrooms, etc)
Preheat oven to 350. Whisk together the eggs and milk. Season with salt and pepper. Spray a standard muffin tin WELL with nonstick cooking spray. Fill the tins 1/3 of the way with egg mixture. Now add in the ham and veggies (filling to top). Sprinkle with cheese. Bake for 15-20 minutes or until puffed and golden brown. Run a sharp knife around the edge of each muffin tin and serve!
Confetti Donuts
1 cup all purpose flour
1/3 cup sugar
1 large egg
1/4 cup milk
1/4 cup sour cream
3 tablespoons melted butter
1 teaspoon baking powder
1/4 teaspoon baking sida
1 teaspoon vanilla paste or Princess flavoring (found at craft stores)
1/4 cup sprinkles of your choice
1 cup powdered sugar
1-2 tablespoons milk
1 teaspoon vanilla paste or vanilla
Preheat oven to 350 degrees. Spray a donut pan with nonstick cooking spray. In a large bowl combine the flour, sugar, baking powder, and baking soda. Add the sour cream, melted butter, vanilla and milk. Stir till it is combined. It will be thick. Fold in the sprinkles. Place the batter in a gallon sized Ziploc bag. Snip the corner and pipe the batter into the donut pan. Bake for 9-10 minutes. While the donuts are baking, in a shallow bowl mix together the powdered sugar, milk and vanilla. Dip the warm donuts into the glaze and then sprinkle with additional sprinkles!
