This time every year, the schools get ramped up for testing. Now I am not going to get on my soap box about my views on this but what I will do is show you some quick make ahead great breakfasts. These are both recipes that you can make says ahead and even freeze for quick warm ups during the week. As if that was not good enough, the best part is that I am using Made in Oklahoma products! Many of these items are doing double duty and will shock you at what you can use them for. Remember that when you buy local you are keeping your dollars in Oklahoma!
Bacon Cheese and Chive Muffins
2 cups self raising flour
1 cup sharp cheese grated cheese
1 cup Bar-S bacon, cooked crisp and crumbled
1 tablespoon fresh chives, chopped
2 tablespoons sugar
2 teaspoons baking powder
1 egg
1 cup Braum’s milk
1/4 cup vegetable oil
Preheat oven to 375°F (200°C) and place muffin liners in each muffin cup. (to make your own make 6×6 squares of parchment paper!) Mix all ingredients gently in a large bowl until just blended together, be careful to not over mix the muffins or they will become chewy.
Spoon into prepared muffin tray. Bake for about 15 mins or golden brown.

2 packages Shawnee Mills Blueberry or Honey Bran Muffin mix
2 eggs
1 1/3 cup milk
Sausage links
Griffin’s Iced Cinnamon Roll flavored syrup
In a medium sized bowl mix together the muffin mix, 2 eggs and milk till smooth. Allow to sit for 20 minutes. Using a medium sized skillet over medium heat pour pancake batter into pan. Cook till the bubbles appear on the surface and then flip. Put cooked pancakes on parchment paper and brush with Griffin’s syrup then add sausage link and roll up. Continue till all pancakes are fixed.
