What I am here to do is tell you how to make the easiest Chicken Noodle Soup on the planet. We drove home this morning from Texas and once we hit the door it began to pour down rain. Now, I am not complaining because my poor state is in need of this moisture in a huge way. But, what it does do for me is it makes me hunker down. Break out a throw blanket. Read a little. Then throw on a pot of soup! Best part is that since I use a rotisserie chicken from the grocery there is little to no prep! Then I use the carcass, celery, onion, and carrot scraps to make stock for next time!
Easy Chicken Noodle Soup
Perfect comfort food that is quick!
- 1 rotisserie chicken, meat removed and carcass set aside
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 celery ribs, chopped
- 3 carrots, chopped
- 1 teaspoon thyme
- 1/2 teaspoon rosemary
- 1 bay leaf
- 3 cups chicken stock (NOT BROTH)
- 3 cups water
- 1 package Reames noodles
- In a large stock pot sauté onions, celery, carrots, thyme and rosemary in olive oil over medium heat. Cook till veggies are tender. Add in chicken meat, bay leaf, stock and water. Allow broth to come to a boil. Add in noodles and cook for 20-30 minutes or until noodles are cooked through. Salt and pepper as needed.
Number of servings (yield): 8
Here is a little money saving kitchen nugget: Take your rotisserie chicken carcass and place in a large stock pot. Fill with water. Add in 1 onion that is quartered, celery ends and green leaf parts, 1 carrot cut into giant chunks, rosemary and thyme. Simmer on stove covered for one hour. Pour broth through a strainer and you will have about 6 cups of chicken stock! I pour mine into plastic containers and freeze! Thaw and use!

LOVE this recipe! There is nothing better than homemade soup in the Fall and this is perfect, especially using the store bought rotisserie chicken! Really like the directions of making the chicken stock too. Now I can say I REALLY made my meal from scratch!

To stay healthy I’m working on a walking regime. I lost over 50 pounds a few years ago by eating healthy and walking 5 days a week. I’ve learned even if I “diet”, I just don’t lose weight unless I walk. Once again, due to lack of walking, I’ve gained weight. I am starting back with a short distance and building up to the 3 miles a morning that I’d gotten to before. I felt great!
