When asked what is my favorite Birthday treat? It is simple. Jaxson’s Ice Cream and Waffle Sundae. This little ice cream shop is a gem of south Florida. It is like going back in time when you visit this iconic spot. I love going in to sit in the shop and watch families and couples young and old enjoying an ice cream date. Their portions are HUGE! The ice cream is homemade and they only use the finest ingredients. It is the closest thing to Braum’s I have ever had when I can’t get my favorite! So, when I am not in Florida, I make my own Waffles and Ice Cream using Braum’s!
Here is my Waffle Sundae!
Dark Chocolate Waffle Sundae with Hot Banana Sauce
1 box Triple Chocolate Cake Mix
1 cup water
1/3 cup oil
3 eggs
In a large bowl whisk together the cake mix with water, vegetable oil and eggs till there are no lumps. Warm up the waffle iron according to manufacturers instructions. Spray the waffle iron with non stick cooking spray and pour the batter on the iron and cook as normal.
Hot Banana Sauce
3 bananas, sliced thin
1/2 cup brown sugar
1/4 cup unsalted butter
1/2 teaspoon cinnamon
2 tablespoon rum
Melt the butter in a large skillet over medium heat. Add the brown sugar, bananas, and cinnamon. Cook till the sugar is melted and bubbly. Add the rum and continue cooking for an additional minute. Remove the warm banana sauce.
To Make the Sundae: Place the waffle on a plate. Top with 2 scoops of your favorite ice cream (mine in Vanilla Chunky Chocolate), A heaping spoonful of the warm banana sauce over the top of the ice cream. Drizzle with chocolate sauce, a dollop of whipped cream and a cherry!
