Wow..I love when it is OU/TX week! It is so much fun to get in the car and head down to Texas or if you are me this year I am HOMEGATING. That means hunkered down here at the house. Cooking up a storm and watching the Sooners! Sounds like football heaven to me. Well I have some go to recipes I always fix when I am trying to Sooner-Up my guests.
Here is a fancy pants pinwheel recipe that takes my favorite Schwab’s Bratwurst and turns it into a portable yummy bite. Best part is that these can be made ahead of time and then just cut and baked right before game time! If you want the BEST meats around then look no further than Schwab’s! I promise once you try them you will kick yourself for not finding them sooner!

Bratwurst Bites
1 pkg Schwab Bratwurst (4 count)
1 package puff pastry, thawed
1 container chive and onion cream cheese
3 tablespoon flaked parmesan cheese
1 egg
1 tablespoon water
Preheat oven to 425 degrees. Using a food processor or chopper mince the Bratwurst till it is small bits.
To prepare the pastry:
Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Brush the pastry sheet with the egg mixture. Top with a smear of cream cheese sprinkle with parmesan cheese. Spread the bratwurst over the cream cheese. Roll up until seam side is down. Cut into 1/4 inch slices and place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture. Bake for 15-20 minutes or until golden.
Red and White Dogs

1/2 pound pepper jack cheese, grated
1/2 pound Velveeta Queso Blanco, cubed
1 onion, chopped
3 tablespoons butter
1/2 cup milk
1/2 cup fresh pico de gallo
8 hot dog buns
In a large sauce pan saute onion in the butter till tender. Add in the cheeses and stir till melted and well combined. Add in milk to thin a bit. Once melted add in pico de gallo and place into a small bowl for serving.
Place hot link on the grill and cook till done. To make red and white dog, place hot links on a bun and top with the white cheese sauce.
