Shortly after I got married, I realized that registering for fancy plates was a waste. My hubby loved to eat his meals out of big plastic bowls. This must be a guy thing. I grew up with sisters and never saw anyone in my house eat an entire meal out of a bowl. Well, quickly I realized I could make delicious meals that only required you to pile on the goodies into a bog bowl and Voila you had dinner done! So, today I am sharing two of my families favorite meals I make that we all eat out of a bowl.
Thai Bowl with Sesame Chicken
2 chicken breasts
1/4 cup Korean BBQ marinade
1 cup shredded carrots
1/4 cup shredded jicama
3/4 cup rice wine vinegar
fresh cilantro
3 cup white or brown rice, cooked
2 tablespoon fish sauce
1/4 cup chopped unsalted peanuts
In a large Ziploc bag add the chicken and Korean BBQ marinade. Seal and allow the chicken to sit in the marinade for at least 30 minutes. Marinate the carrots and jicama in another Ziploc bag by adding rice wine vinegar and allowing it to sit while chicken marinates and then cooks. Slice chicken breast thin and saute in coconut oil till cooked through. Remove from the pan to cool slightly. To make the bowl: Add 3/4 cup rice to a bowl. Add the marinated carrot and jicama mix, fresh cilantro, and sliced chicken. Sprinkle with chopped peanuts. Serve with a drizzle of fish sauce.
Teriyaki Chicken Brocooli Bowl
2 chicken breasts, grilled and sliced
2 cups fresh broccoli, steamed
1/2 red pepper, sliced
1 zucchini, cut into 1/4 and cubed
2 cups white or brown rice, cooked
Sauce:
1/2 cup low-sodium soy sauce
juice of one orange
1/4 cup water
3 tablespoon light-brown sugar
3 tablespoon honey
3 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon rice vinegar
1 1/2 tablespoon cornstarch
Combine all of the ingredients in a sauce pan over medium heat and cook till thickened. Remove from the heat and set aside.
Saute the vegetables in 1 tablespoon coconut or canola oil till veggies are tender. (Not limp…still crisp)
To make the bowl: add 3/4 cup rice to bowl. Top with sliced chicken and veggies. Drizzle with teriyaki sauce and enjoy!
