It is not even June and it is hotter than blue blazes…as my Mama would say! So, that means break out the sprinklers, fill up that pool, go to the lake or beach to stay cool! I am no meteorologist but I think this summer is going to be a HOT ONE! I have 2 yummy recipes that are sure to help you beat the heat!
1 3/4 cup Karo syrup or agave nectar
1 1/4 cup Nellie & Joe Key lime Juice
1 3/4 cup orange juice
9 cups water (divided)
3/4 cup granulated sugar
In a large microwave safe bowl or in a saucepan heat the corn syrup, sugar and 4 cups of the water till sugar is dissolved. Add the sugar water into a large gallon size
container. Mix in 5 cups of cool water, orange juice and key lime juice. Stir till well combined. Serve over ice with a lime wedge.
*Add a little vodka and tonic for an adult spritzer!
Quick Roasted Salsa
4 large tomatoes
1 yellow onion, cut into wedges
1 jalapeno, seeds removed (optional)
1/2 red pepper
1/2 green pepper
1 bunch cilantro
3 cloves garlic
1 teaspoon sea salt
Olive oil
Heat the grill or grill pan to medium high heat. Brush the peppers, onions and jalapeƱo with olive oil. Place the vegetables on the grill and cook till veggies are blistered. Remove from the grill. Place the tomatoes, onions, peppers, cilantro, and garlic in a food processor or blender. Pulse until salsa is chunky not liquid. Taste and add more salt as needed. Pour the salsa into a bowl with an airtight lid. Chill for 2-3 hours. Serve with your favorite tortilla chips.
