I cannot tell you how many times I have had people tell me that they cannot bake. Well that is silly. If you can read this article then you can bake. Just takes a few rules and you will rock the oven in no time. Fire up for delicious biscuits that only takes 4 ingredients and one of them is Shawnee Mills Biscuit Mix. It is a superb product that is made right here in Oklahoma! Here are my 2 recipes that are super duper easy. Best thing is that your people will sing your praises! So warm up that oven and lets get ready to bake!
Weeknight Soda Biscuits
3 packages Shawnee Mills Buttermilk Biscuit mix
1 cup sour cream
1 cup ginger ale
1/2 stick unsalted butter
Preheat oven to 400 degrees. Place half a stick of butter in the bottom of a pie pan and put it in the oven melt. In a medium sized bowl put the 3 packages of biscuit mix in and then mix in the sour cream and ginger ale. Mix together. It will be sticky. Put the biscuit dough on a well floured board and knead gently until it is not sticky. Form the biscuit dough into a rectangle and cut into 9 squares. Remove the warm pie dish with melted butter and place the biscuits in the pan filling it. Bake for 20 minutes or until golden brown.
Almond Joy Zucchini Bread
1 3/4 cups sugar
2 cups grated zucchini (about 3 zucchini)
3 eggs
1 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
3 cups Shawnee Mills All Purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup chocolate chips
1/2 cup coconut flakes
1/4 cup chopped almonds
Preheat oven to 350 degrees. Spray 2 loaf pans well with non stick cooking spray. In a large bowl, mix together the eggs, oil and sugar. Add in the zucchini, vanilla and coconut extract. In a medium sized bowl combine the dry ingredients except for the nuts, coconut and chocolate chips. Incorporate one cup at a time the dry ingredients into the wet mixture. Stir till dry ingredients are combined. Add in the chocolate chips, coconut and almond flakes and then pour evenly into the loaf pans. Place in oven and bake for 45-50 minutes or until toothpick comes out clean from the middle of the loaf.
