Kids are going back to school and that means families are go go going! Gone are the lazy days of summer. Here comes packing lunches, after school snacks, teacher notes and juggling it all with grace. Well, at least we try. Well, I am here to share some of my kids favorite snacks!
This first one is great to make and share! I even take these to soccer games for half time snacks. They are packed with protein for tons of energy! Feel free to experiment with the nut butter and mix-ins!
Power Boost Peanut Butter Crunch Balls
1 cup old fashioned oatmeal
2/3 cup Rice Krispie
1/2 cup peanut butter (you can use any nut butter)
3/4 cup wheat germ
1/2 cup mini chocolate chips
1/3 cup honey
Stir all the ingredients together till combined. Using a small cookie scoop or large table spoon to form balls. Using your hands roll into a smooth ball and place on a parchment lined plate. Allow these to chill in the refrigerator until ready to eat!
Right now I have a son going through two-a-days with football. He comes home hot, tired and totally out of energy. So, I keep trays and trays of these frozen banana bites on hand. They cool your athlete down from the inside while supplying a healthy punch of potassium! Great little treat that is simple and inexpensive to make!
Frozen Banana Bites
4 bananas (cut into 1 1/2 in. chunks)
2 cups semi sweet chocolate chips
1 tablespoon vegetable oil
chopped nuts, coconuts, or rice krispies
In a small bowl combine the chocolate chips and vegetable oil. Place in the microwave and cook on medium high heat for 30 second intervals till melted and smooth. Dip the bananas in the chocolate and then dip in a bowl of toppings. Set the bananas on a parchment lined baking sheet and then place in the freezer to freeze!
