Nothing says yum like fresh avocados! I have had the pleasure to enjoy some of the most wonderful avocados I have ever tasted…I recently picked up some Avocados from Mexico and they are superb. In the past, I have gotten other varieties of avocados and the ones from Mexico are now my families new favorite. I never knew there would be such a difference in the flavors and textures between the type of avocados and especially where they are grown. Now I am a believer that not all avocados are created the same! Since I am on a bit of a avocado tangent here are a few fun facts:
- Did you know avocados are actually a fruit….though they are used as a vegetable in the culinary world.
- Avocados from Mexico have the highest minimum oil content requirement for its growers. This means a creamy avocado every time!
- These little gems are available year round. They bloom up to 4 times a year thus ensuring fresh yummy avocados year round.
- Feed your kids tons of avocados because they are a super food! They supply nearly 20 vitamins, minerals and phytonutrients , including potassium, vitamins B6, C and E, folate and fiber. They also have B complex vitamins that support memory and brain function!
I can’t describe it other than they are much more durable and the “meat” of the veggie holds up perfectly in the chunky style guacamole I made today. In fact, I made a Caribbean guacamole reminiscent of the flavors we had in the Bahamas this summer. When my son and I were making it, I was a little concerned that my great idea might taste not so good. But wow was I wrong! I took our concoction to our neighbors daughter’s 1st birthday party and everyone begged me for the recipe. I told them I would post it here but truly the secret is my good avocados. Avocados from Mexico will be the only way I will go from now on when I am buying these precious super vegetables (fruit)! So now I will share it with you! So super yummy and beautiful to look at! I promise if you make this you will be very popular at your next party. Then serve leftovers to your kids in their lunch boxes! Give them some yummy brain food to get their school year started off with a bang!
Chunky Caribbean Guacamole
4 avocados from Mexico, large chunks
1 small onion, chopped fine
2 mangoes, medium chunks
1/4 cup fresh cilantro, chopped
1 large tomato, chopped
juice of 1 lime
salt and pepper, to taste
1 jalapeno, chopped small (optional)
Combine all of the above in a medium bowl and mix together. Do not over mix as you want this to stay chunky and not be smooth. To serve place the pit of one of the avocados in the bottom of your serving bowl. Place prepared guacamole on top. (The pit keep your guacamole from turning brown). Serve with tortilla chips or with quesadillas!
