Can you feel the cool breeze blowing through the trees? How about the slight chill as you step out in the morning? Maybe those sniffles that turn into a full fledged cold? Well all of those things have been happening here in Norman. The last one has hit me like a ton of bricks! In fact, I have been to the Urgent care twice in a week and still on the mend. So, as I sat here feeling sorry for myself I cracked open a wonderful cookbook I was given. The Comfort of Apples by Philip and Lauren Rubin is just that…a comfort! I read it cover to cover and loved every minute of it. Once of my most favorite features was the chart that showed all the varieties of apples and how they are best used in the kitchen. Who would have known there were so many varieties with so many uses. As I laid here and read I was impressed at how easy these very complex recipes were to make. I truly believe this book would be perfect for the beginner and even the experienced cook.
Tomorrow I am planning on trying to get well enough to get to the store so I can get some beets to make the Citrus Beets and Apples Salad. I am pretty sure that with that combination surely no cold could withstand all those vitamins and earthly goodness to continue to attack my immune system. In fact, I may even back it up with a dessert of Breakfast Beignets. Basically fried apple dumplings dredged in sugary goodness!
Way to go Philip and Ruben at creating a cookbook that is both beautiful and fun to read. I love to read cookbooks but the ultimate compliment is if I am inspired immediately to go try out the recipes. This book has me quivering for some comfort!
