Are are a fish lover? Well there are 2 types of eaters. Fishy ones and others who do not like fish. Luckily, I have had the opportunity to live part time by the sea where I get the best of the best in what the sea has to offer. However, when this mermaid mama comes back to Oklahoma she craves fish! So, here are some of my go to recipes when I need my food fix from the sea!
Fancy Fish Foil Dinner
7 cups fresh spinach
4 fish filets (orange roughy, mahi mahi, sea bass, swordfish)
2 teaspoons minced fresh ginger
2 teaspoons minced garlic
1/2 cup white wine
1/4 cup soy sauce
2 teaspoons sesame oil
4 (1 tsp.) pieces of butter
Zest of 1 lime
fresh basil leaves
Use 4 large sheets of heavy duty foil as your cooking container for your foil dinners. Preheat oven to 400 degrees. In a small bowl combine the white wine, soy sauce, sesame oil, and lime zest. Whisk together and set aside.
Place 1-1 1/2 cups of fresh spinach in the center of each of the foil pieces. Place fish on top and then sprinkle evenly with the fresh ginger and minced garlic. Pour the sauce (evenly) over the fish. Place one pat of butter on each fish filet and then seal up the foil by folding. Place on baking sheet and cook for 15-20 minutes. Remove from the oven and allow to sit for 5 minutes before opening and eating!
Grilled Fish with Lemon Sauce
4 fish filets (orange roughy, mahi mahi, tilapia)
Juice of 1 lemon
1/2 cup mayonnaise
2 tablespoons honey or agave nectar
kosher salt and pepper
Fresh Italian parsley, chopped
Heat your grill or grill pan till hot. Season fish with olive oil, salt and pepper. Place on grill and cook till done.
While fish is cooking, in a small bowl combine the mayonnaise, lemon juice, honey, salt, pepper and italian parsley. Whisk together.
When the fish is done cooking remove from pan and place on a plate. Top with lemon sauce and serve with a fresh green salad or summer time Waldorf Salad.

Me too! But I try to make due when in Oklahoma with frozen Mahi Mahi and Sea Bass. It is a pretty good way to bring the ocean to my kitchen.
