This Valentine’s I am declaring it to be a holiday where I will celebrate those I appreciate and love with tokens of my affections. No, this is NOT a Fifty Shades of Grey super sexy holiday for me. It is more like a day where I can show those around me that I love them. Frankly, the “grey” version scares the tar out of me and I would just rather bake some cookies! These recipes are simple to make and are also perfect to bag up and share! My kids even commented that the sandwich cookies tasted like homemade oreos! That was quite compliment…since I am a lover of Oreos! Get in the kitchen and share your love this Valentines Day!
Red Velvet Yum Yums
3/4 cup white chocolate candy melts
5 cups Rice Chex cereal
1/4 cup chocolate chips
2 tablespoons cream cheese
1/2 package of red velvet cake mix
1/2 cup powdered sugar
M&M’s

In a small sauce pan melt together the chocolate chips, white chocolate candy melts, and cream cheese till smooth. Then in a large bowl toss together the Rice Chex cereal with the chocolate mixture and allow to cool for 5 minutes. Place the red velvet cake mix and the powdered sugar in a gallon sized ziploc bag. Pour the Chex cereal into the bag and toss to coat thoroughly. Place the yum yum mix on a parchment lined counter and allow this to harden for an hour. Place in resealable containers and sprinkle with m&m’s and candy sprinkles!
Double Chocolate Sandwich Cookies
2 sticks unsalted butter, room temperature
1 3/4 cups granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup unsweetened Hershey’s Special Dark Cocoa Powder
2 3/4 cups all purpose flour
1/2 teaspoon kosher salt
1 teaspoon baking powder
1 container frosting of your choice

Preheat the oven to 350 degrees and line baking sheets with parchment paper. In a large mixing bowl, beat together the butter and sugar till creamy. Add the vanilla, eggs and cocoa powder beating till smooth. In a medium sized bowl combine the flour, baking powder and salt. Add one cup at a time to the mixture and mix till the cookie dough is stiff. Divide the dough in half and form into a disk. Wrap with plastic wrap and chill for one hour. Roll out the dough till it is 1/4 inch thick. Cut out your desired shapes and bake for 10 minutes. Cool on a wire rack. Frost the cookie with the frosting of your choice and place another cookie on top to form a sandwich. Roll the edges in sprinkles. Store in an airtight container till you are ready to eat!
