It may be freezing outside but there is still way to bring the sun inside! Eat oranges. They are in season and so delicious. Go to any grocery right now and you will see a multitude of varieties. Naval, blood orange, mandarin, honeybell, etc! The varieties are endless and so are their flavors! Here is a super easy side dish that you can make that is both healthy and delicious! The best thing is that it gets better and better every day it sits.
Champagne Orange and Cous Cous Salad
2 packages pearl sized cous cous, prepared according to package
3 fresh oranges peeled with segments removed
2 cups fresh arugula
1/2 cup dried cherries
Juice of 1 lemon
Juice of 3 oranges
1/4 cup champagne vinegar
1/2 cup olive oil
1 tablespoon honey
salt and pepper
2 tablespoon pistachios, chopped
Place the cous cous in a large bowl. Toss the cous cous with oranges, arugula, and cherries. In a small bowl whisk together the lemon juice, orange juice, champagne vinegar, olive oil, honey, salt and pepper. Pour the dressing over the top of the salad and toss together. Serve with a sprinkle of pistachios.
Sweet and Spicy Chicken Meatballs
1 1/2 pounds lean ground chicken
2 tablespoon olive oil
1 large egg
3 tablespoons freshly chopped parsley
1 tablespoon tomato paste
2 clove garlic, minced
1/4 cup milk
1/2 cup grated Parmesan/Romano cheese
1/3 cup Italian Bread crumbs
1 teaspoon Tuscan spice blend
Salt and pepper
2 tablespoon tomato paste
1/4 Thai Chili Sauce
Preheat oven to 375 degrees. In a large bowl combine the ground chicken, olive oil, egg, parsley, tomato paste, garlic, milk, parmesan cheese, bread crumbs, spice blend, salt and pepper. Mix together well. Allow the meatballs to sit in the refrigerator for 30 minutes before rolling into balls. To make a larger dinner sized meatball, use a 1/4 cup measuring cup to scoop the meatball mixture. Lightly dampen your hands and roll the meatballs and place on a parchment lined baking sheet. Continue till all the meatballs are formed and then place in the oven to bake for 20 minutes. While the meatballs are cooking, combine the tomato paste and chili sauce in a small bowl. Place a heaping spoonful on top of each meatball and allow them to cook an additional 10 minutes. Serve while ho
