Easter is the kickoff to all things Spring! Not only is it the most important holiday for my faith it also makes my heart sing with Spring happiness. I kinda feel like Snoopy…skipping around gleeful that the flowers are out! So, in honor of all of the flowers I enjoy baking cheerful treats. No need to go to the store and pickup cupcakes when you can make them at home. There are always leftover candies! Peeps are great to use to decorate with since they come in all kinds of shapes and flavors. They are even great to use in mason jar gifts or in flower displays! Peeps are more than marshmallow fluff! Just look at Pinterest to see all the uses!
Jelly Bean Cupcakes
1 white cake mix with pudding
3 eggs
1 cup water
1/2 cup canola oil
1/2 cup sour cream
1/2 cup jellybeans, cut in half
Pastel colored frosting
Peeps, jellybeans and other Easter decorations
Preheat oven to 350 degrees. In a medium sized mixing bowl beat together the white cake mix, 3 eggs, 1 cup water, 1/2 cup canola oil, and sour cream for 2 minutes. Cut 3/4 cup of jelly beans in half. Stir in and use an ice cream scoop to fill each muffin 3/4 of the way full. Bake for 15-18 minutes or until cooked through. Allow cupcakes to cool. Frost with pastel colored frosting and decorate with Peeps, candied eggs and jelly beans.
Bunny Fluff Cake
1 box Spice cake
1/2 cup shredded carrots
4 eggs
1/2 cup water
1/2 cup oil
1/2 cup pecans, chopped
2 packages Bunny shaped Peeps
2 cups M&M chocolate eggs
2 cups shredded coconut
5 drops green food coloring
Preheat oven to 350 degrees. Grease 2 (9 inch) round baking pans with nonstick cocking spray. In a medium sized bowl, mix together the spice cake mix with 4 eggs, 1/2 cup water and 1/2 cup oil. Beat together with a electric hand mixer. Add in the carrots and pecans. Pour the prepared cake mix into baking pans and cook for 25-30 minutes or until cake is golden brown and cooked through. Remove from the oven and invert cakes onto parchment paper. Leave the pans over the top to seal in the steam. Allow to sit like that for a couple of hours or overnight. To decorate: Frost the middle layer then place the 2nd cake layer on top and repeat frosting the top and sides. Place bunnies all around the outside of the cake. To make coconut grass: Place coconut in a Ziploc bag and add drops of green and shake till coconut is the desired shade of grass. Sprinkle over the top of the cake and then place chocolate eggs on top!

Fluffy Frosting
1 1/2 cup sugar
1 1/2 cup corn syrup
6 egg whites
1 tablespoon vanilla
In a smal saucepan simmer the sugar and corn syrup till sugar in dissolved. Remove from heat. In an electric mixer beat together the egg white till frothy. While mixer is running slowly pour in the warm corn syrup and mix well on high. Till stiff peaks form. Add in the vanilla and beat well. Use as frosting or meringue for pies or even baked alaska! Freezes great!

I have a real allergy to Cornstarch & derivatives but for some reason corn syrup doesn’t bother me , so it’s nice to finally have something sweet like that which I can enjoy without suffering . I’ve enjoyed several of you recipes . Ever think to cook Scandinavian ? Sorry to miss you on Sunny Anderson’s , we like her too .
