This is a southern delicacy. One of my favorite treats when I go to visit my family from Georgia. Any proper southern belle knows how to whip up biscuits in a flash! Here is my recipe for the moistest biscuits that will ever touch your lips! Perfect for the holidays. Slap a piece of ham and some honey butter in one of these babies and you will have died and gone to southern food heaven!
Sweet Potato Biscuits w/ Ham and Honey Butter
• 3 cups flour
• 2 heaping tablespoons baking powder
• 1 teaspoon salt
• 1 cup vegetable shortening
• 2 cups mashed cooked sweet potatoes
• 1/2 cup sugar
• 1/2 cup buttermilk
• 1 pound of thinly sliced ham
• Honey Butter (see below)
Mix together flour, baking powder and salt. Cut in shortening with a fork or your fingers. Small crumbs should form. Combine sweet potatoes and sugar, mixing well. Add buttermilk. Combine sweet potato and flour mixtures. Blend well. Place on floured surface and roll to 1 inch thick. Cut with biscuit cutter but make sure NOT to twist the cutter. This make your biscuits not rise as high! Bake on a parchment lined baking sheet at 400° for 10 minutes or until browned. Brush with melted butter. Split in half and add a slice of ham and some honey butter!
Honey Butter
1stick unsalted butter
3 tablespoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla paste
1/8 teaspoon kosher salt
Combine the butter, honey, cinnamon, vanilla paste and salt in the bowl of an electric mixer. Place onto 2 sheets of wax paper in a log and roll. Twist ends and place in refrigerator to harden.
